Is proud that Jack gave himself the injection yesterday.
Still haven't had a drop of wine or broke into kids Halloween candy but the day is not over.
Plan to take a long walk with one of the dogs tomorrow morning. Maybe around Perrineville lake.
Starting to get a list together of what to bake for the holidays this year to give as gifts.
I created a recipe yesterday called
Autumn Chili
1 onion finely diced
2 red peppers finely chopped
1 rib of celery finely chopped
2 large sweet potatoes or yams peeled and cut into 1 inch cubes
4 cloves of garlic finely chopped
2 tsp ground cumin
1 Tbsp chili powder
1/2 tsp cayenne (or to taste)
1 tsp salt
pinch of sugar
1 Tbsp unsweetened cocoa ( this adds a nice richness)
1 large can black beans (drained and rinsed)
1 large can kidney beans drained and rinsed
28 oz can crushed tomatoes
1/2 water or chicken stock
2 Tbsp olive oil
1/2 cup chopped cillantro (optional)
1 chopped avocado (optional)
sour cream (optional)
Heat olive oil in a large pot on medium heat and add all of the chopped veggies. Saute them for about 4 minutes and take them off of the heat. Add all of the spices, salt, sugar, cocoa and mix (it will become thick). Add water or stock and mix well. Bring back on the heat.
Add the tomatoes and simmer on low for 20 minutes - if the mixture becomes thick add water or stock as necessary.
After 20 minutes add the beans and simmer for an additional 10 minutes.
Throw in the cillantro and mix.
Serve with 1 chopped avocado and sour cream if desired.
Crushed tortilla chips are nice too.

Serves about 3-4 people.

Day one
First day that I can see my breath while taking dogs out.
First full day without a drop of wine.
Trying really, really hard not to break into my kid's Halloween candy stash.
Laughing because my 12 yr old son actually has a written inventory of his candy.
Breakfast with Rebecca.
Math homework .... still hate it after all these years.
Nurse coming to teach me how to give my son his daily injections.
Hoping not to pass out cold on nurse and son while trying to give injection.
Made Chicken Vegetable soup.
Thinking of Paris today. One of my favorite cities.
